Waste water from commercial food service providers have high loadings of oil and grease coupled with high surge volumes and high temperatures resulting in high FOG, BOD, COD, and TSS.  The high volumes of oil and grease (FOG) and suspended solids (TSS) can clog sewer lines and pumping stations while the higher levels of Biological (BOD) and Chemical (COD) Oxygen Demand can create operational problems at the waste treatment facility.  Because of these issues, many municipalities are enacting and enforcing tougher regulations for the operation of grease traps, driving up costs for commercial food service providers.
